Christmas means TAMALES! All you can eat delicious homemade tamales!
My grandmother made them on a regular basis. She passed away years ago and her recipe wasn’t written down. She just made them. I found a good Mexican cookbook by Rick Bayless Mexico: One Plate At A Time
But I knew that it wasn’t the exact recipe. I talked to my mom and went over it with her. She made corrections to the recipe so it matched my grandmother’s. And then away I went making tamales every Christmas. My family loves them. I’ve only messed them up once or twice. Usually the batches come out great. I could buy them now that I’m back in El Paso but my hubby insists mine are the best. Flattery will get you more tamales.

Oh that’s fun having something spicy for Christmas! My husband’s grandmother likes to make those homemade candies–mine and his favorite are those peanut butter balls dipped in chocolate, but we call them buckeyes (just like the plant). Glad you were able to get close to your grandmother’s recipe! Sounds like some stuff that has happened in our families as well–a grandmother takes her killer recipe for something to the grave!
I love home made tamales, tho I have never made them myself. I really should give it a try. I am here in northern NM and there are plenty of folks to give me tips so I can get it right.
I have to warn you it is a 3 hour process not including cooking the pork in a slow cooker overnight.
